In the Vineyards
Lieu Dit Sauvignon Blanc is composed of grapes from three vineyards in the Santa Ynez Valley. Grassini, McGinley, and Star Lane vineyards each contribute different attributes to the wine. The Star Lane vineyard, with its gravelly shale soils, brings structure and focus. The richer clay soils at Grassini vineyard bring a soft richness. The shallow clay soils at McGinley, poised atop firm serpentine rock, give the wine a vivacious energy.
Each growing season offers a new chance to see how the interplay between these three sites helps us craft a refreshing Sauvignon Blanc that is beautifully balanced and subtly layered with nuance and complexity.
In the Winery
Our winemaking responds to the different styles of Sauvignon Blanc from our three vineyard sources. First, we gently press the grapes before fermenting the juice in both stainless steel tanks and in old wine barrels. Rather than making the wine all the same vessel, diversifying our fermentation continues the theme of layering and nuance that the different vineyards give us.
After fermentation, the wine is aged in old barrels for about a year. Before putting the wine into the bottle, we lightly clarify it by fining with bentonite clay.
