A combination of both tank and barrel fermentations that are aged in neutral barrels. We source our fruit from three vineyards in Happy Canyon called Grassini, McGinley, and Star Lane. Varying soils of sand, shale and gravel at Star Lane and heavier clays with larger yellow and red chert, and serpentine rocks at both McGinley and Grassini. $25/btl
From multiple blocks in the Star Lane vineyard. The wine fermented retaining the whole cluster and once pressed is then transferred to neutral barrels for the winter. Once malolactic fermentation is complete, we quickly rack the wine back to tank and bottle to retain the natural Co2 present in the wine to keep it fresh. $30/btl
Pinot fruit form Sanford & Benedict Vineyard in the Sta. Rita Hills. Lean and mineral driven with flavors of strawberry and watermelon, mouth watering finish with an elegant touch of tannins making this a great pairing for any situation.
Our Malbec comes from the Happy Canyon Vineyard in the Santa Ynez Valley. It is fermented retaining 100% of its whole cluster. After being pressed the wine is transferred to 5+ year old, neutral barrels for the winter. No fining or filtration is used. Flavors of black fruits and tobacco are carried by a strong acid backbone making this a perfect pairing for braised leg of lamb or a beef stew. $33/btl
